Saturday's Adventure

Yesterday Mike and I drove down to Bedford, with the end goal of going to a wild game dinner at his sister's church. We stopped in at the bend and dent store on the way, and boy did we rack up.

We were able to get a few spices, brown sugar, Ghirardelli chocolate bars (!!), low cal chocolate pudding, several boxes of scallopped potatoes, a few cans of chicken noodle soup,  several bags of potato chips/chex mix, 8-10 cans of beans, 1 bag of dried beans, 6 packets of yeast, apple juice, granola bars, niquil, cortozine cream, 2 bottles of centrum performance vitamins, bandaids,  2 bags of frozen perogies, 2 red baron frozen pizzas, ketchup, pineapples, apple pie filling and a handful of other things for aronnd $60.

The dinner was fabulous.  my favorites were venison meatloaf and bbq pulled boar, and of course my SIL's PB pie. . I braved the porcupine and was then told it was chicken, so that was dissapointing,  but everything was wondeful and we got to get out of the house/town for a day, which was even more wonderful to me.

Tomorrow I hope to make a menu from the things we bought and have in the freezer, go grocery shopping and call a few places to check the status of my applications.

How was your Saturday? What's the "wildest" thing you've eaten? Did you like it?

Cheddar Chicken

I made this last week and served it with oven roasted potatoes. And it was a hit! Mike liked it the best out of all of the recipes I've been trying lately (except for the tacos, of course). And the best part? It's very simple, which is fitting considering I tore the recipe out of  Real Simple Magazine (only my favorite ever!)

                                              You need:

boneless skinless chicken breasts
16 ritz type crackers, crushed
 6 oz grated cheddar
 1 clove chopped garlic
 4 tbs melted butter

Steps:

1. Preheat oven to 350F. Mix the crackers, cheese, garlic and salt and pepper to taste.
2. Dip the chicken in the melted butter and then in the cracker mixture, pressing the crackers onto the chicken..
3. Sprinkle remaining mixture on top of chicken breasts and pour remaining butter on top. Bake until golden brown- about 25 minutes.

Easy, huh?

Mama Kat Prompt: Love to Chocolate

The prompt I picked suggests writing a poem to your favorite food:

You roll across my tounge
and linger on my tastebuds,
as my ears savor your sweet snap.

All things at once,
dark , sweet, milky, bitter, creamy
Perfect alone or paired with a companion

The perfector,
the finishing touch to any dish,
the happy ending to every meal.

My first love

Where I've Been

Saturday, posts went up that I'd written for Friday. Why didn't they go up Friday?

Well, I'd been at the hospital most of the day Friday. I got a call from Mike's work saying they'd called him an ambulance because he was light headed, had chest pain and had a high pulse while laying down.

So I rode 45 minutes over to the hospital and we waited to find out what was wrong. The doctors weren't sure but his heart checked out fine.

Sunday night I was sitting in my (fabulous and super comfy) chair and a half making cards, when Mike looked over at me and said "Get me an asprin and then call an ambulance."

He was burning up hot and said he felt like his heart was beating so fast and hard it could explode and he was having trouble breathing. The ambulance took half an hour to arrive (from a hospital 20 minutes away) and pulled in as I was about to take him myself. They pulled in without lights or sirens flashing and took about 5 minutes to get into the house. They were slow and managed to knock over everything near them- and this was before they went back out to the ambulance for the stretcher.

15 minutes or so later he was in the ambulance and I was in my car. Another 3-5 minutes later we were on the road, and 15 minutes later at the hospital.

The nurse observed his difficulty breathing and the fact that when he felt light headed his pulse was rising. We stayed overnight in the hospital and they monitored his heart all night. Again his heart checked out fine and he passed a stress test.

They sent him home wiht a heart monitor and orders to see a family doctor. We went to the doctor yesterday and he returned to work today. The family doctor was the first person to listen to him say "First, I feel light headed, and then I can't breathe and then my heart goes crazy". The family doctor says the order is important and most likely means the faster heartbeat is a reaction to whatever else is going on and that it may be a panic attack disorder.

So, hopefully in a few days we will know what is going on.

In the meantime, I haven't heard back from Subway, but I did apply at the Ramada Inn today (and they are hiring!) so hopefully something will come from that as it is only 5 minutes down the road.

Did I Mention....

that Hotglue and I started a new baking blog? We love to bake together, but thats become a tad difficult since I moved to PA, so we decided to start a blog where we can share our baking adventures and challenge each other to try new recipes or techniques.

Also, we love to try new recipes so we'd love it if you'd head on over to visit and throw us a few challenges yourselves. But, be gentle, please, as we're not the most experienced in the kitchen.

We've only got a handful of posts up so far, but expect more soon!

It's called Hotglue Baking Challenges and you can check it out here!

* This was suppoused to post yesterday but I didn't get the chance, as we spent the day at the hospital.

I haven't done this in awhile, but I've come across a blog that I really love, so I'd like to do a quick spotlight. I'm keeping this short because I've got another wedding recap coming up today.

Mary on Mission is a wonderful blog written by an old friend of mine. I used to drive her to school when we were in high school and she has matured into a beautiful, intelligent, mature young woman.

Mary is new to the blogging world, but is quickly creating a great blog. Her blog is both refreshing and insightful and often serves as a faith-based reminder for me.

So stop by and show her some love.
