Red Beet Eggs

My husband loves to eat these as a snack and as a side with his meal. I think they smell, but he loves them so I thought I'd try to make them since they are so expensive in the store.

Ingredients:

1 cup white sugar
1 cup vinegar
1 can of red beets
hard boiled eggs, shelled




Boil eggs and then shell them. While they boil, mix the sugar, vinegar and beets into a bowl. It helps if you have a big bowl with a lid. Make sure the sugar is dissolved and add in the eggs. Cover and let them sit for 2-3 days, stirring/shaking/sloshing twice a day to dissolve the sugar. You know the eggs are done when  you cut the eggs opne and they are a pinky purple all the way through.
