A very good friend of mine taught me how to make this (several times, I'm a slow learner with a bad memory) and Mike and I both love it.
1 whole chicken or 2 boneless skinless chicken breasts
8oz sour cream
2 cans cream of chicken (or 1 can cream of chicken, 1 can mushroom)
approx 1 cup seasoned bread crumbs or stuffing mixture
Boil and shred the chicken. Combine with sour cream and creams of chicken. In a seperate bowl combine the bread crumbs with melted butter. Layer chicken, crumbs, chicken, crumbs. Finish by pouring approx 2 cups of the broth the chicken boiled in over the casserole. Bake at 350 for 25-30 minutes.
