"Chocolate Banana Snackin' Bars"

I made these the other afternoon for us to snack on throughout the week. And they're only 70 calories apiece. My first impulse was to eat one warm out of the oven. And it was incredibly dry and dissapointing, so I bagged them and stuck them in the fridge. Deciding to give them a second chance, I tried another one the next morning and it was incredibly moist! So resist all urges to a hot and fresh one and refrigerate them awhile before diggin' in.

Ingredients:

1 cup mashed bananas (3 medium)
3/4 cup brown sugar, packed
1/3 cup oil
1/ cup milk
2 large eggs
1 tsp baking powder
1 tsp cinnamon
1 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp salr
1 3/4 cups flour
1/2 cup chocolate chips

Steps:

Preheat to 350F. Line a baking SHEET with foil and grease/spray.

Beat on medium speed- mashed bananas, sugar, oil, milk, eggs, powder and soda, cinnamon, vanilla and salt in a large bowl. On low speed beat in flour until well combined. Stir in chocolate.

Spread into pan. Bake 15-20 minutes until it passes the toothpick test.

Let cool and then cut lenghtwish into four strips. Cut each strip into ten pieces.

  1. Chocolate and bananas go together like chocolate and peanut butter -- it's a perfect marriage!
